Streusel Coffee Cake
an
easy, tasty coffee cake from scratch that is most excellent as the apples
become ripe and in season in fall
Coffee cake:
Non-stick cooking spray
1 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/4 c. butter, softened (not melted)
1/2 c. sugar
1 egg
1 tsp. vanilla
3 Tbs. plain yogurt
2 c. thinly slice, unpeeled apples
Topping:
1/4 c. flour
2 Tbs. Brown
sugar
1/2 tsp. cinnamon
2 Tbs. butter
Heat oven to 350°
F. Spray 9-inch round or 8-inch
square pan with non-stick spray. In a small bowl, combine the dry ingredients and mix well.
In a large bowl, cream the sugar and butter.
Beat until light and fluffy. Add
egg and vanilla and blend well. Alternately
add yogurt and dry ingredients to the butter mixture.
Mix well after each addition. Spread
batter in sprayed pan. Arrange
apple slices decoratively over batter.
In small bowl, combine all topping ingredients except the
butter. With pastry blender or
fork, cut in the butter until crumbly. Sprinkly
the topping evenly over the apples.
Bake for 30 to 35 minutes or until toothpick comes out
clean. Cool for at least 10 minutes
before serving.
