Garam Masala
1 tablespoon cardamom seeds
A 2-inch stick of cinnnamon
1 teaspoon black cumin seeds (regular cumin seeds may be
used as a substitute
1 teaspoon whole cloves
1 teaspoon black peppercorns
¼ of an average sized nutmeg
Place all the ingredients in a clean electric
spice or coffee grinder. Grind for
30-40 seconds, until finely ground. I
hand grind them, but it takes a lot of forearm and a mortar and pestle.
Store in a small jar with a tight-fitting lid.
Keep away from heat and light.
