Lime |
Place lime juice in bowl and sprinkle gelatin over the top to soften. Bring milk to a simmer in a heavy saucepan and remove from heat. Add white chocolate to milk and stir until smooth. Add gelatin mixture to milk and chocolate and stir well. In small bowl, combine sugar, Neufchatel cheese and the zest from the lime. Mix until creamy. Slowly beat the white chocolate mixture into the Neufchatel mixture. In a separate bowl, beat the whipped topping until firm; then fold into white chocolate/Neufchatel mixture. Pour filling into pre-made graham cracker crust. Cover and refrigerate overnight. Serve cold.
