Mole Poblano
this is
my recipe for the mexican sauce called mole (pronounced moh'-lay). It
is a spicy sauce that is excellent with chicken and with enchiladas.
Not a lot of work because most of it is done in the blender.
Put in blender:
1 ½ onions
2 pasillo green peppers
(seeds removed)
1 can chicken broth
2 med. tomatoes
½ bunch cilantro
1/3 bunch Italian
parsley
2 chilis anchos
2 small dried red chilis
Blend until smooth.
In a saucepan, put
½ can chicken broth
4 cloves garlic, minced
or crushed
Bring to a boil and add
blender contents. Simmer together
for 15 minutes.
Add to blender:
1 small stick cinnamon
4 whole cloves, ground
freshly ground black
pepper
½ c. sesame seeds
½ c. slivered almonds
½ c. peanuts
½ can chicken broth
5 squares baking
chocolate
¼ cup golden raisins
Blend above ingredients
and add to pot. Close lid and
simmer 30 minutes or until spices and sauce are well blended.
